Our catering and food services range from basic daily meals to State banquets, all delivered according to our certified ISO 9001/14000/22000, TBMED530, IFS (International Food Standard) processes. Leveraging our established supply chains, warehousing capabilities, and distribution infrastructure, we source and stock the highest quality ingredients to produce the tastiest Italian, Mediterranean, and International dishes. We also stand prepared with Meals Ready-to-Eat (MRE) and rations.

We employ internationally certified and appropriately experienced food preparation specialists skilled in preparing meals for multicultural diners with differing tastes and requirements including Kosher, Halal, vegetarian, vegan, special dietary, and nutrition specific. Our staff prepare and serve nutritious, safe and delicious food in clean and orderly facilities in accordance with international health and hygiene guidelines as recommended by FAO/WHO Codex Alimentarius Commission’s Code of Hygienic Practice for Recooked and Cooked Foods in Mass Catering, CAC/RCP 39-1993, HACCP and ISO 22000 FSMS (Food Safety Management System).

Regular Catering Service

Breakfast, lunch and dinner, plus snacks, either buffet format, or À La Carte, according to budget and dietary demands, and geography. Menu cycles can range from 28 days to 60 days. On average, we require 2 to 3 weeks to mobilize and initiate our standard catering services for customers, but can transition from incumbent operators virtually immediately, and for critical and emergency situations, we can facilitate requirements in minimal time.

Meals Ready-to-Eat (MRE)

We deliver innovative solutions for rapid deployment and mobile operations in the form of ready-to-eat meals which are healthy, nutritional, and taste great. We have stand-by stock in our strategic distribution centres, which enable us to mobilize immediately to support critical missions and time-sensitive demands for prepared meals.

Additional Food Services

Through our proprietary online request system (or the customer’s own system) we can receive requests and then quote for additional food services, such as one-time events, which are outside of the fixed service deliverable.

Rations

We can support development of well-balanced rations for forces and personnel who are on the move or may be operating without a broader support infrastructure. Our rations are delivered based on the customers’ requirements and use, and range from Jungle Rations to 10-in-1 Rations.

Banquets

Hosting VIP guests, support events, meetings, conferences, or even throwing private champagne evenings, we are able to rapidly support banqueting requests, leveraging the infrastructure available within the delivery region, with 24 hours minimum notice.

Special Events and Menus

Our food service teams are always looking to enhance the dining experience for our customers. We use special events and menus to honor international holidays such as New Year’s Eve, Martin Luther King Day, Thanksgiving, Iftar, Rosh Hashanah, and Christmas. We also host regular BBQ evenings and theme nights. One of our most popular theme nights is our “Local Palate” evening, where we introduce local fresh foods to our customers.

Limited/Specific Catering

We will support any and all food preparation and service requests. This can involve a specific style of food, such as pizza, being served from a dedicated pizzeria, or sandwiches from a bakery.

Field Catering

We are experts at preparing nutritious meals in extremely challenging environments Equipped with rapidly deployable mobile kitchens, we can follow forces into their operating environments ensuring everyone is fed and hydrated adequately.

Additional Services

To ensure our patrons total satisfaction, we offer additional services, such as room/office service, take-away meals, and we install accessible, well-stocked vending machines for their use.

Health & Safety

Our food service operations follow the strictest HACCP standards to ensure safety and health. This includes the constant performance, verification and recording of disinfection of equipment and utensils, cleaning of kitchen and dining areas, daily personal hygiene and health checks for staff, proper waste disposal, and temperature regulation of served and stored food. Special attention is placed at each identified control point of food safety and health and all personnel are trained in mitigation practices.

We maintain all equipment used by our catering teams to manufacturer guidelines and schedules, or improved versions. We procure parts and spares to overcome unexpected failures in this equipment, to guarantee full capacity of services.

We implement a Food Safety Plan that is applicable to all of our catering operations. For each new project, we develop and implement strategies to reduce excess production of food and operate our responsible food waste management plan. This includes, but is not limited to, provisions for composting of food waste

Nutrition

Our catering and food services guarantee consumers a diverse, seasonal and healthy diet. When customers choose Momentum for catering services, they choose a world-class caterer who implements the highest standards of health and hygiene protocols, with robust procedures and analysis of ingredients, suppliers, and in the preparation and distribution of meals.

Our menus and ingredients are selected to deliver the perfect nutritional balance. We account for individuals with specific conditions and specific diets, such as low sodium diets for individuals with high blood pressure and our nutritionists are on-hand for persons who need help tailoring their dietary plans to their specific needs.

Nutrition Science

Our food preparation specialists and nutritionists design high quality, healthy meals and menus and use our cutting edge software and equipment to perfectly calculate the essential nutrition in each meal and menu, guaranteeing each one is balanced in terms of fluid, adequate essential amino acids from protein, essential fatty acids, vitamins, minerals, and adequate calories.

Structured Nutrition Plan

Our Structured Nutrition Plan focuses on the following key factors:

  • Simple, tasty dishes, derived from fresh, seasonal ingredients
  • Total omission of margarines, hydrogenated fats, monosodium glutamate, and other flavour enhancers
  • Promoting the exclusive use of vegetable fats, with a preponderance of olive oil
  • Healthy cooking techniques using reduced cooking times in order to preserve and maintain the nutrients and vitamins in the high quality ingredients

Promoting Healthy Body Weight

The key metric for weight is the Body Mass Index (BMI). By monitoring BMI we can help manage weight gain which should help reduce the occurrence of cardiovascular disease. We help our patrons manage their BMI with our easy to access multi-media totems at each of our catering locations enabling them to calculate their BMI and select dishes that best suit their dietary profile. The integration of the BMI and the dietary recommendation system into our menu database system positions our patrons to make informed decisions when selecting their meals. Patrons access their dietary profile on our system and can see the meal options available on that day, which are recommended for them based on their dietary requirements.
